    Hi Annie.

    I asked my hubby, who knows things, about the difference in the bread. The wheat grown in France is a different variety and grown differently and has a lower gluten content which is probably why people who have issues at home can eat bread in France.

    In Australia, the reason for the high gluten content is because the wheat has a high protein content and our farmers are paid for the protein content. We have had to cut down the amount of bread we eat.

    I don’t have the technical details but I’ve heard this somewhere else in recent years, so an expert could probably give more precise details, and maybe explain it better than I can.

    I am sure there is a lot to this because baking is chemistry. But for people who eat a lot of bread, French people do stay pretty trim. Maybe it’s because we don’t eat so many other wheat products like pasta?
